Recently my family has changed the foods we consume. This isn't the first time we have done such a thing. You see our oldest son was diagnosed with Autism and over the years we have tried absolutely everything we can fathom to help him out. Now let me preface by saying there is currently no known cure for Autism and before you change a diet it would be best to consult a health professional.
The first thing we actually did was have all of the members of our family take a food sensitivity test with several naturopathic doctors. Each time the results showed that many of the members of our family have high sensitivities to wheat, dairy and sugar. In an effort to help our bodies and our gut bacteria we opted to adopt a paleo diet in our house. What this basically means is we eat meat, vegetables, fruits, nuts, seeds, oil and a tiny bit of honey as a treat.
So fast forward to our sons 13th Birthday and I wanted to be able to celebrate with him but also not set back all of the hard work we have done by eliminating the foods that lead to major mood swings, anxiety attacks and fixations. Enter the Paleo Strawberry Carrot Cake. This is a cake I have created after trying several other cake recipes and melding it into my own. I wanted to use up some of the purple carrots that we had grown this past year that were sitting in our cold room. Now you don't need to make this cake with purple carrots. Any carrot will do.
Now the amazing part about this recipe is how it was received. Not one person that I have fed it to realized that it was Paleo and I have actually made it a couple times now and not one piece of icing or cake gets left behind. It is that good.
